The annual Fusion Dinner was held during Week 9, with Year 12 Food & Hospitality and Senior School VET students presenting an array of fine dining dishes.

Around 90 guests were seated in the Cafeteria, which had been transformed into the Fusion@Cedar Restaurant, complete with musical entertainment provided by some of the Senior School music students.

While the atmosphere was relaxed and enjoyable in the dining room, behind the scene was a hive of activity as the students cooked, prepared and plated a total of 450 dishes throughout the night. The menu began with an Hors d’oeuvre of smoked salmon, followed by an appetiser of sweet potato dip with tapioca cracker and lemon coconut chicken. The entrée dishes of salt and pepper squid and beetroot, feta, and bean sprouts salad, kept students extremely busy throughout the dinner service.

The main course of native Australian spiced dukkah lamb cutlets served with roast kipfler potatoes was followed by an Australian lamington inspired entremet for dessert, with a range of hot drinks to finish off the night.

Throughout the evening, a number of silent auctions and competitions kept guests busy, while also raising much-needed funds to go towards service projects for next year’s Thailand Service Trip.

As always, the event provided an excellent opportunity for students to experience working in the Hospitality Industry and we thank all of the students involved, along with Miss Zimmermann and Miss Sampson, for a deliciously memorable evening.
